Rice Wine

Actually been on for about two weeks but oh well. Started up a rice wine, looks nice but has thrown a massive amount of sediment so far.
1.5kg long grain rice
~1kg sugar
water to 2 gal mark in fermenter
2tsp amylase (so far)
yeast & nutrient
Basically cooked rice, bunged in 1tsp amylase, left to cool overnight
Poured into fermenter with 1/2 sugar, filled with water to 2gal mark
left for 10 days, shaking as I went past
strained and filtered (as best I could through muslin and a sieve)
poured into 2 demijohns (well, 2/3 full in each) added the rest of the sugar
I'll rack it off at some point this week, it should all fit into 1dj, looks hazy still but smells nice.

I was right about it fitting nicely into 1 dj, s.g. was down to 1020 when I racked it, can't see any airlock activity. Had a sulphury smell to it, but hopefully that'll go when I degass. Still a bit hazy but I can happily read the racking slip through it

What kind of yeast do you use for this?
I recall that both Chinese and Korean rice wines have their own particular yeast which usually comes in the form of hard blocks rather than powdered.

Similar to koji?
I just used Gervin universal (wilkos) as it was what I had in, the amylase should see to the starch, which is hopefully the only worry

It's up for racking today/tomorrow. Dropped mostly clear, will have a quick sip when I rack it.

Racked today. SG 1010 but tastes dry so I'm guessing it's the crud that's not dropped out (prob starch) raising the sg. From the tiny taster I had there wasn't a grand deal of flavour, but hopefully that'll be proven wrong when I actually bottle it.
