Various WOWs and a summer fruits punch

Postby Gethin79 » Fri Jun 27, 2014 15:37

Seeing as my stocks are dwindling I've set a few WOWs going, all to the standard recipe.

WGJ / 1l Pineapple

WGJ / 2l Cherry

WGJ / 1l mango, peach and papaya Tropicana (SWMBO loved this one). It throws a huge sediment though so you tend not to get as much out of it.

Also experimenting with a recipe I got a while ago from TOPOS.

1L Robinson's summer fruits barley with no added sugar
400g sugar
1tsp yeast nutrient
1tsp super wine yeast

Simmered Robinson's juice for 10mins to get rid of preservatives.
Added yeast, nutrient and 2tsp sugar to a glass of lukewarm water and covered with foil.
Added remainder of sugar to juice, stirred until dissolved.
Topped up saucepan with cool water then added to DJ.
Topped up DJ and added yeast.

Apparently this makes a nice refreshing fruit punch at around 4% when served over ice. We're planning a big BBQ for the end of August, so if this is nice I'll make a load of different variations to serve...then just hope the weather is nice!! :thumb:

I don't want to put a downer on your experiment and hope it works better for you than it did when i tried a ribena wine, I don't think boiling gets rid of the preservative resulting in a painfully slow fermentation (many weeks) which usually sticks before it is finished.

I hope you prove me wrong. :thumb:

Hmmm. I'll have to see how it goes. I made it up last night and it seems to be fermenting nicely at the moment, albeit nowhere near the ferocity of a WOW, but then I suppose there is less sugar which I would assume leads to a calmer fermentation?

I didn't actually take an OG of this so I won't really know if it's stopped early, but I suppose if it's sickly sweet, then it didn't finish!! I think 5 pints of beer before making it kind of upset my routine somewhat!!!

I'll keep you updated :thumb:

You can use your hydrometer to see how far its has fermented, the OG only matters if you want to know the ABV.

Well I think I can say that the punch experiment is fermenting well.

I've just had to fit a blow off tube as it looks like it'll be escaping shortly. Wasn't expecting it from this one!

Think the high temp in my kitchen is having this effect on all my brews!!

Same here, I started a couple of DJ's of juice wine a couple of hours ago and they are bubbling already.
