Wanting to experiment a little with small batches in 1 gal demijohns to create some great brews which i can then make more of! Any ideas of a starting point- everything i look at seems to be 5 gallon.

If I was you I would focus on Hop combinations and timings. practice with pale extract and get your hop schedule nailed, then when you're happy with your hop profile you should scale up the recipe for an allgrain batch and then with each try focus on the malt profile.
