I've grown and used whiskey malt for home brewing. Its lower in Nitrogen than beer brewing malts, the difference is significant but not damagingly so. You can successfully use it as a percentage of your Pale Malt or in your case where its smoked maybe up to 10% of the overall malt bill.

Hi Mark it usually is used in making malt whiskey but me being a Scot I wanted to try it in beer so will do a porter with it as smoked malt should never be used in a Scottish 70/ or a heavy either

As a Scot shouldn't you be using whisky malt?

Tried a Japanese beer called Minagof that used peaked malt as part of the Weatherspoons ale festival. Really liked it as a third. Doubt I could of drank a pint.

Yeah you are right rpt but I am told it should be used with caution a bit like using water with whisky you need Scottish water to appreciate it

I bought some of the whisky smoked malt from thbc aswell, will need to brew a beer and split it in two as I've still got whisky chips and rum chips, had them for about 2 years now and never found the time to use them. also bought chateau cara blonde, cara ruby and cara clair malt from thbc aswell, used a 500g bag in my hoppy blonde i brewed this weekend along with 4.5kg of pale malt. we'll see how it goes.there's so much bloody malt available these days eh!

Yeah I agree with the whiskey malt I'm looking forward to using mine might make some sort of porter with it. I am trying to use up what I have now my favourite malts are melanoidin and the carafe types and special b malt but have recently bought Brown malt to make a brown porter .It would be interesting to see how your wood chips turn out in the future sounds the ticket
