Black Malt or Roasted Barley?

Black Malt or Roasted Barley?

Hello all,

As some of you know I'm trying my hand at a few historical beers, I came across a recipe that had listed 'Roasted Malt', I assumed it was Roasted Barley and forgot all about it.

Until yesterday when I went to put the recipe in the software and decided to do a little digging, it didn't take long to find out that Roasted Malt was brewers speak for Black Malt in the good ole days. I also found a supporting article that too referred to Black Malt as Roasted Malt but also argued Roasted Barley could be included as it is sometimes know as Black Roasted Barley and is technically an unmalted barley product the same as Black Malt is...or was.

What I now wonder (not being a fan of Black Malt) is do I stick to the original recipe wholeheartedly as it's an attempt at a historical clone...or do I use Roasted Barley?

What would you do?

Slightly off-topic, but have you got a copy of Durden Park's book?

Partly, because its is full of historical recipes that have been researched and recreated using the available modern ingredients - and so it may give greater clue regarding your question, but also because it has a mini-guide to how to read and interpret old brewing records that could be of use.

From memory though, their recipes do use a lot of black malt. The majority of the porters are simply pale, brown & black malt. Although I do recall some barley being in some of the recipes...
